A warm and hearty beef stew that’s perfect for busy days, made in a slow cooker with minimal prep time.

Ingredients

  • 2 lbs beef stew meat
  • 4 cups beef broth
  • 3 carrots, chopped
  • 3 potatoes, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. In a slow cooker, add the beef stew meat, carrots, potatoes, onion, and garlic.
  2. In a separate bowl, mix together the beef broth, tomato paste, thyme, salt, pepper, and bay leaf.
  3. Pour the mixture over the beef and vegetables in the slow cooker.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
  5. Remove the bay leaf before serving.

Notes

For extra flavor, sear the beef in a pan before adding it to the slow cooker. You can add other vegetables for more variety. For a thicker stew, mix cornstarch with water and stir in during the last hour of cooking.
