A comforting pasta dish that combines Cajun spices with creamy sauce, perfect for busy weeknights or entertaining guests.

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta
  • Fresh parsley for garnish
  • Extra Parmesan cheese
  • Crushed red pepper flakes for added heat

Instructions

  1. Season the chicken: Rub the chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper. Marinate for 15–20 minutes if time allows.
  2. Add to slow cooker: Place the seasoned chicken in your slow cooker, adding the sliced bell peppers, onion, and chicken broth on top.
  3. Cook: Set the slow cooker to low for 6–7 hours or high for 3–4 hours.
  4. Shred the chicken: Once cooked, remove and shred the chicken with two forks. Return it to the pot.
  5. Make it creamy: Stir in the cubed cream cheese and shredded Parmesan until melted and creamy. Cook for an additional 10–15 minutes on low.
  6. Cook the pasta: In a separate pot, cook the pasta according to package directions until al dente. Drain and stir into the slow cooker mixture.
  7. Serve: Dish out the creamy pasta into bowls, garnishing with fresh parsley, extra cheese, and crushed red pepper flakes if desired.

Notes

Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on stovetop or microwave. For freezing, store pasta and sauce separately.
