A warm and hearty soup that combines creamy textures with tender potatoes and savory ground beef, perfect for busy weeknights and family meals.

Ingredients

  • 4 cups diced potatoes
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cups beef broth
  • 1 cup cream or milk
  • 1 can condensed cream of mushroom soup
  • Salt and pepper to taste
  • Optional: shredded cheese, green onions for garnish

Instructions

  1. Brown the ground beef along with the diced onion in a skillet over medium heat. Drain excess fat after cooking.
  2. Transfer the cooked beef and onions into your crockpot.
  3. Add in the diced potatoes, beef broth, cream of mushroom soup, and season with salt and pepper.
  4. Stir to combine, then cover the crockpot.
  5. Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  6. Just before serving, stir in the cream or milk.
  7. If desired, garnish with shredded cheese and green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat slowly on the stovetop or in the microwave.
