A comforting and flavorful French onion soup, made easy in a crockpot, perfect for chilly evenings.

  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup white wine (optional)
  • 2 tablespoons butter
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Baguette slices
  • Gruyere cheese, shredded

Instructions

  1. Melt the butter in a skillet over medium heat. Add the sliced onions and cook them slowly, stirring occasionally until they turn golden brown and caramelized (about 20-30 minutes).
  2. Transfer the caramelized onions into your crockpot.
  3. Pour in the beef broth and white wine (if using), then add sugar, salt, and pepper. Stir to combine.
  4. Cover the crockpot and set it to cook on low for 6-8 hours.
  5. When ready to serve, ladle the soup into bowls. Top each bowl with a slice of baguette and a generous sprinkle of grated Gruyere cheese.
  6. Place the bowls under the broiler until the cheese is bubbly and golden. Serve hot.

Notes

For a vegetarian version, use vegetable broth and swap Gruyere with Swiss cheese. Leftovers can be stored in the fridge for 3-4 days or frozen for 2-3 months.
