A comforting and flavorful crockpot white chicken chili that’s easy to make and perfect for cozy nights in.

  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn (frozen or canned)
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  2. Add the white beans, diced tomatoes, chicken broth, diced onion, minced garlic, chili powder, cumin, and season with salt and pepper.
  3. Stir to combine the ingredients.
  4. Cover the crockpot and set it to cook on low for 6-8 hours or high for about 4 hours.
  5. About 30 minutes before eating, shred the chicken in the pot using two forks.
  6. Stir in the corn and add sour cream or Greek yogurt, letting it heat through for about 15 minutes.
  7. Serve hot, topped with shredded cheese if desired.

Notes

Searing the chicken before adding it to the crockpot can deepen the flavor. Adjust the spices for a personal touch.
