  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup creamy buttercream icing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients, mixing until just combined.
  6. Scoop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. Once cooled, frost with buttercream icing.

Notes

For the best results, ensure your butter is soft but not melted. Allow cookies to cool slightly before frosting to prevent melting.
