A delightful celebration of summer’s sweetest fruit, combining fluffy cake with fresh strawberries and whipped cream.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F and grease and flour two 8-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the softened butter, milk, eggs, and vanilla extract to the dry mixture. Beat everything together until smooth.
  4. Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  5. After baking, let the cakes cool in their pans for about 10 minutes before transferring them to a wire rack to cool completely.
  6. While the cakes cool, whip the heavy cream and powdered sugar together until stiff peaks form.
  7. Take one cake layer and place it on a serving plate. Spread half of the whipped cream over the top, then add half of the sliced strawberries.
  8. Place the second cake layer on top and repeat the process with the remaining whipped cream and strawberries.
  9. Serve immediately for best flavor, or refrigerate for up to 2 hours before serving.

Notes

Serve with powdered sugar or chocolate sauce, and pair with vanilla ice cream for an indulgent touch.
