Easy Asian Cucumber Salad

A cool and refreshing cucumber salad with a savory dressing, perfect as a side dish for any meal.

Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic (minced, optional)

Instructions

  1. Rinse and slice one end of the cucumber at an angle, continuing to slice it at an angle to create oval shapes.
  2. Add the cucumber slices to a bowl and sprinkle with 1/2 tsp of salt; mix well and refrigerate for at least 20 minutes to draw out the water.
  3. Drain the water and give the cucumbers a quick rinse before returning them to the bowl.
  4. Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and optional garlic; stir until well combined.
  5. Serve chilled and enjoy!

Notes

For crunchier cucumbers, use fresh, firm Persian cucumbers. Adjust the sugar according to taste. You can also add other veggies like bell peppers or carrots.
