Quick, comforting burritos filled with seasoned beef, crispy tater tots, and melted cheddar.

Ingredients

  • 4 large flour tortillas
  • 1 cup cooked and seasoned ground beef
  • 2 cups crispy tater tots
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream, for serving
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium. Add ground beef, season with salt and pepper, and cook until browned.
  3. Stir in taco seasoning and a splash of water, simmer for 1-2 minutes.
  4. Prepare tater tots according to package directions until crispy.
  5. Lay a tortilla flat, add beef, tater tots, and cheddar down the center.
  6. Fold the sides and roll the tortilla tightly. Place seam-side down on a baking sheet.
  7. Bake for 10-15 minutes until golden and cheese is melted.
  8. Serve warm with sour cream on the side.
