A quick and simple recipe for rich, decadent chocolate truffles that are perfect for gifts or personal enjoyment.

  • 8 oz dark chocolate (60% cocoa)
  • ½ cup heavy cream
  • ¼ cup cocoa powder (for rolling)
  • 1 tsp vanilla extract

Instructions

  1. Chop the dark chocolate into small pieces and place in a mixing bowl.
  2. In a saucepan, heat the heavy cream over medium heat until it simmers. Pour it over the chopped chocolate and let sit for 5 minutes.
  3. Stir the mixture until smooth and glossy to create ganache.
  4. Cover and refrigerate for at least 2 hours until firm.
  5. Scoop tablespoon-sized portions of ganache and roll into balls using your hands.
  6. Roll each truffle in cocoa powder or your choice of toppings before serving.
