A simple and flavorful crockpot chicken dinner that requires minimal prep and allows for a hassle-free cooking experience.

Ingredients

  • 1 pound of chicken breast
  • 1 can of black beans, rinsed and drained
  • 1 can of diced tomatoes
  • 1 cup of corn
  • 1 packet of taco seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the bottom of the crockpot.
  2. Add the black beans, diced tomatoes, corn, and taco seasoning on top.
  3. Season with salt and pepper to taste.
  4. Stir gently to combine the ingredients.
  5. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
  6. Shred the chicken with two forks before serving.

Notes

Serve with warm tortillas, avocado, or cheese. Pairs well with a side salad or rice.
