A quick and comforting honey garlic chicken recipe perfect for weeknight dinners.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Chopped green onions, for garnish

Instructions

  1. Pat the chicken pieces dry with paper towels and season lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the chicken in a single layer and brown them, turning occasionally for about 5 to 7 minutes.
  4. In a small bowl, whisk honey, soy sauce, garlic, and ginger until smooth.
  5. Pour the sauce over the browned chicken and simmer, scraping up any browned bits.
  6. In another bowl, mix cornstarch with water until smooth and stir into the simmering sauce.
  7. Cook until the sauce thickens, about 2 to 3 minutes, adjusting with water if too thick.
  8. Serve the chicken over cooked rice and garnish with green onions.

Notes

For a gluten-free version, use tamari instead of soy sauce. You can substitute arrowroot for cornstarch at a 1:1 ratio.
