Delightful lemon brownies that bring a burst of citrus flavor, perfect for parties or a sweet snack.

  • 1½ cups all-purpose flour
  • 1½ cups granulated sugar
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 4 large eggs (room temperature)
  • 2 tablespoons lemon zest (from 23 lemons)
  • ⅓ cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice (for glaze)
  • 1 tablespoon lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine flour, sugar, and salt. Add the softened butter, eggs, lemon zest, lemon juice, and vanilla extract. Mix until well blended.
  3. Pour the batter into the prepared baking dish and bake for about 25-30 minutes, or until golden brown and a toothpick comes out clean.
  4. Let the brownies cool completely in the pan.
  5. For the glaze, whisk together powdered sugar, lemon juice, and lemon zest until smooth. Pour over cooled brownies and let it set.

Notes

Store leftovers in an airtight container for up to three days at room temperature. For longer storage, refrigerate for a week or freeze for up to three months.
