Delicious and healthy breakfast oatmeal cups made with oats, apples, and cinnamon, perfect for busy mornings or brunch.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or non-dairy alternative)
  • 1/2 cup applesauce
  • 2 apples, diced
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine the rolled oats, milk, applesauce, diced apples, cinnamon, maple syrup, vanilla extract, baking powder, and salt.
  3. Mix until well combined.
  4. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until the cups are set and lightly golden on top.
  6. Allow to cool slightly before removing from the tin. Enjoy warm or store in the fridge for meal prep!

Notes

Store any leftovers in an airtight container for up to five days, or freeze for three months. Reheat in the microwave.
