A delightful twist on traditional pancakes, this casserole combines fluffy pancake batter with juicy blueberries, perfect for breakfast, brunch, or cozy dinners.

  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/4 cup butter, melted
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the pancake mix, milk, eggs, sugar, and vanilla until smooth.
  3. Pour half of the batter into the greased baking dish.
  4. In a separate bowl, toss the blueberries with a bit of sugar, then spread them evenly over the batter in the dish.
  5. Pour the remaining pancake batter on top of the blueberries.
  6. Drizzle the melted butter over the top.
  7. Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
  8. Allow to cool, then dust with powdered sugar before serving.

Notes

For the fluffiest casserole, do not overmix the batter. A few lumps are okay. Using fresh blueberries will enhance the flavor and texture.
