Delightful fluffy mini pancakes filled with creamy Nutella, perfect for breakfast, snacks, or dessert.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Nutella, for filling

Instructions

  1. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.
  4. Heat a non-stick skillet over medium heat.
  5. Drop small amounts of batter onto the skillet to make mini pancakes.
  6. Cook for about 1-2 minutes or until bubbles form on top.
  7. Spoon a small amount of Nutella onto the pancake and cover it with another pancake.
  8. Flip carefully and cook for another 1-2 minutes until golden brown.
  9. Repeat until all batter is used.

Notes

Use room temperature ingredients for better mixing. Do not overmix the batter to keep the pancakes fluffy.
