  • 3 medium ripe nectarines, sliced
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 cup ground almonds (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. Wash and slice the nectarines into thin wedges; set aside.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, ground almonds (if using), and salt.
  4. In another bowl, beat the eggs; then add melted butter and vanilla extract; mix until smooth.
  5. Combine the dry ingredients with the wet mixture until just combined. Gently fold in the sliced nectarines.
  6. Pour the batter into the prepared pan and bake for 40-45 minutes, or until golden brown and a toothpick comes out clean. Let cool slightly before serving.

Notes

For best flavor, use ripe nectarines. Optionally dust with powdered sugar before serving.
