French Strawberry Cake

A delightful dessert showcasing the natural sweetness of fresh strawberries with a moist and buttery cake.

  • 1 1/3 cup flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 stick of softened butter
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup sour cream or Greek yogurt (low fat recommended)
  • 2 cups rough chopped strawberries
  • Sugar for finishing

Instructions

  1. Preheat your oven to 350 degrees F. Grease a 9-inch round pan and add a layer of parchment paper to the bottom.
  2. In a medium bowl, mix together the flour, baking powder, and salt. Set this mixture aside.
  3. In a large bowl, whip the softened butter and sugar until fluffy.
  4. Add the eggs to the butter mixture one at a time, beating well after each addition.
  5. Stir in the vanilla and mix thoroughly.
  6. Alternately add the flour mixture and sour cream to the butter mix, beginning and ending with the flour mixture.
  7. Gently fold in the chopped strawberries with a spatula.
  8. Spread the batter evenly in the prepared pan and sprinkle sugar on top.
  9. Bake for 35-40 minutes, or until a cake tester comes out clean.
  10. Let the cake cool before serving. It will come out of the pan easily for presentation.

Notes

Serve with whipped cream or vanilla ice cream. Store covered at room temperature for 2-3 days or refrigerate for up to one week.
