Fudgy Chewy Browkies

A delightful blend of fudgy brownies and chewy cookies, these brookies are perfect for any dessert lover.

Ingredients

  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat the oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
  2. In a heatproof bowl, combine chopped dark chocolate and butter, then melt over a pan of simmering water. Stir in the vanilla extract.
  3. In a separate bowl, beat the caster sugar, demerara sugar, and eggs with an electric whisk until light and fluffy, about 5 minutes.
  4. Sift together flour, cocoa powder, baking powder, and salt in another bowl, then mix in chocolate chips.
  5. Fold the melted chocolate mixture into the whipped egg mixture gently.
  6. Carefully fold the dry ingredients into the wet mixture until just combined.
  7. Scoop tablespoons of batter onto the prepared tray and bake for 12-14 minutes or until set and crackly on top.
  8. Remove from the oven, sprinkle with sea salt if desired, and cool on the tray for 10 minutes before transferring to a cooling rack.

Notes

Serve warm, great with ice cream or powdered sugar. Store in an airtight container for up to 4 days or freeze for up to 3 months.
