Delicious Fudgy Chewy Browkies combine the rich flavors of brownies and the chewy texture of cookies for the ultimate sweet treat.

Ingredients

  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Prepare a baking tray by lining it with parchment paper.
  2. In a heatproof bowl, combine the chopped dark chocolate and butter. Place this bowl over a pan of simmering water and stir until melted and combined, then mix in the vanilla extract.
  3. In a separate bowl, whisk together the caster sugar, demerara sugar, and eggs until light and fluffy, about 5 minutes.
  4. Sift together the flour, cocoa powder, baking powder, and salt in another bowl and add chocolate chips.
  5. Gradually fold the melted chocolate and butter mixture into the whipped eggs and sugars. Stir gently to maintain the airy texture.
  6. Carefully fold the dry ingredients into the wet mixture until just combined.
  7. Scoop tablespoons of batter onto the prepared tray, spacing them apart, and bake for 12-14 minutes until set and crackly on top.
  8. Remove from oven, optionally sprinkle with sea salt, and let cool on the tray for about 10 minutes before transferring to a cooling rack.

Notes

Serve warm with vanilla ice cream or chocolate sauce. Store in an airtight container for up to 3-4 days or freeze for up to 2 months.
