Ingredients

Scale
  • 3 cups (380g) cake flour
  • 1 3/4 cups (350g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 tablespoons (180g) unsalted butter, room temperature
  • 1/3 cup (80mL) vegetable oil
  • 2/3 cup (160mL) buttermilk, room temperature
  • 1 cup (240g) full fat sour cream, room temperature
  • 1 tablespoon pure vanilla extract
  • 4 large eggs, room temperature
  • 3/4 cup (120g) rainbow jimmies sprinkles
  • 1 1/2 cups (340g) unsalted butter, room temperature (for buttercream)
  • 6 cups (700g) powdered sugar, sifted
  • 1/2 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 3 to 5 tablespoons whole milk, as needed for consistency

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round pans or three 8-inch pans. Line bottoms with parchment.
  2. Whisk together cake flour, baking powder, baking soda, and salt in a large bowl. Set aside.
  3. Beat butter with granulated sugar in a stand mixer until light and fluffy, about 3 to 4 minutes.
  4. Add vegetable oil and beat for 30 seconds. Add eggs one at a time, mixing well after each.
  5. Mix in vanilla extract.
  6. Add dry ingredients alternately with buttermilk and sour cream in three additions, beginning and ending with dry ingredients. Mix just until combined.
  7. Fold in rainbow jimmies gently to prevent color streaking.
  8. Divide batter evenly among prepared pans and smooth tops.
  9. Bake until a toothpick inserted comes out clean, about 25 to 35 minutes.
  10. Cool cakes in pans for 10 minutes, then invert onto a rack to cool completely.
  11. Beat butter for buttercream on medium speed until creamy.
  12. Add sifted powdered sugar, mixing on low to avoid clouds.
  13. Add salt and vanilla, then beat until light and creamy, about 3 minutes.
  14. Add whole milk until the frosting is spreadable.
  15. Trim cake layers as needed and stack layers with buttercream in between.
  16. Apply a crumb coat and chill for 20 to 30 minutes.
  17. Finish with a final coat of buttercream and extra sprinkles.

Notes

Use cake flour for a tender crumb. Bring all ingredients to room temperature before mixing.
