Ingredients

Scale
  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil for searing

Instructions

  1. Prep ingredients: Cut the beef into bite-sized pieces and halve the baby potatoes. Mince the garlic.
  2. Optional parboil: Boil the halved potatoes for 3 to 5 minutes until just beginning to soften, then drain.
  3. Sear the beef: Heat the olive oil in a skillet over medium-high heat. Brown the beef on all sides and transfer to the slow cooker.
  4. Make the garlic butter: In a small bowl, whisk melted butter with garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
  5. Assemble in the slow cooker: Place potatoes in the bottom, add the seared beef, pour garlic butter over, and add beef broth.
  6. Cook: Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
  7. Rest and finish: Let the dish rest for 10 minutes before serving.
