Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 4 cloves of garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, drizzle the olive oil and heat it over medium heat.
  2. Add the chopped onion and minced garlic; sauté until the onion turns translucent.
  3. Stir in the chickpeas and cumin for a couple of minutes to let the flavors meld.
  4. Pour in the vegetable broth, increase the heat, and bring to a boil. Once boiling, reduce the heat and let it simmer for 15 to 20 minutes.
  5. Season with salt and pepper to your liking.
  6. Using an immersion blender, puree the soup until it reaches your desired consistency.
  7. Serve hot, garnished with freshly chopped parsley.

Notes
