A fast and flavorful shrimp dish coated in garlic, olive oil, and Parmesan, perfect for weeknights or entertaining guests.

  • 1 pound (about 450 g) raw shrimp, peeled and deveined, tails optional
  • 3 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley or basil, plus extra for garnish
  • 1/2 teaspoon fine salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and position a rack in the center.
  2. Pat the shrimp dry with paper towels.
  3. In a large bowl, combine the minced garlic, olive oil, grated Parmesan, and chopped herbs to make a loose paste.
  4. Add the shrimp, tossing until evenly coated. Season with salt and pepper to taste.
  5. Spread the shrimp in a single layer on a baking sheet lined with parchment or an oiled tray.
  6. Bake for about 10 minutes, checking at 8 minutes to ensure they are not overcooked.
  7. Remove from the oven and serve warm, garnished with extra herbs and a squeeze of lemon if desired.

Notes

Use medium to large shrimp for best results and freshly grated Parmesan for optimal melting. Serve with spaghetti, rice, or a side salad.
