A warm and inviting soup made with tender potatoes, fresh vegetables, and dairy-free cream, perfect for cold evenings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup dairy-free cream
  • Salt and pepper to taste
  • Herbs (such as thyme, parsley, or chives)

Instructions

  1. In a large pot, add the diced potatoes, carrots, celery, and onion. Pour in the vegetable broth and bring to a boil.
  2. Reduce the heat and let it simmer until the vegetables are tender, about 20 minutes.
  3. Use an immersion blender to puree the soup until smooth, or mash the vegetables for a chunkier texture.
  4. Stir in the dairy-free cream and season with salt, pepper, and herbs.
  5. Simmer for an additional 5 minutes before serving. Enjoy hot!

Notes

For extra flavor, sauté the onions and other vegetables in a bit of oil before adding the broth. Adjust thickness by adding more broth or cream as needed.
