Deliciously spiced Gingerbread Crinkle Cookies that are soft, chewy, and perfect for holiday gatherings.

  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup molasses
  • ¼ cup vegetable oil
  • 1 large egg
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, salt, and cocoa powder until well blended.
  3. In a large mixing bowl, combine the granulated sugar, brown sugar, molasses, and vegetable oil. Mix thoroughly until well combined.
  4. Add in the egg, beating until the mixture reaches a smooth consistency.
  5. Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined—don’t overdo it!
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Scoop tablespoons of the chilled dough, roll into balls, and coat each ball generously in powdered sugar.
  8. Place the balls on the prepared baking sheet and slightly flatten them.
  9. Bake for 10 to 12 minutes, ensuring the edges are set while the center remains soft.
  10. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For optimal results, ensure the dough is properly chilled; this enhances the flavor and makes it easier to work with. Don’t over-bake; they should be chewy in the center.
