A delightful dessert featuring creamy Greek yogurt and sweet pineapple, perfect for any occasion.

  • 1 cup (120g) graham cracker crumbs
  • 1 Tablespoon (12g) granulated sugar
  • 3 Tablespoons (43g) unsalted butter, melted
  • 6 ounces (168g) brick-style light cream cheese, softened
  • 3/4 cup (181g) plain nonfat or low-fat Greek yogurt
  • 2 large eggs
  • 1 large egg yolk
  • 1/4 cup (50g) granulated sugar
  • 1/3 cup (80ml) pineapple juice
  • 1 teaspoon pure vanilla extract
  • Optional: cherries and pineapple slices for topping

Instructions

  1. Preheat the oven to 300°F (149°C). Line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, whisk together the graham cracker crumbs and sugar, then mix in the melted butter. Press this mixture into the baking pan and bake for 8 minutes; let it cool.
  3. In another bowl, beat the cream cheese until smooth, then mix in the Greek yogurt.
  4. Add the eggs and yolk one at a time, mixing until smooth.
  5. Stir in the sugar, pineapple juice, and vanilla.
  6. Pour this mixture into the crust and bake for 34–36 minutes until set.
  7. Cool for 1 hour, then refrigerate for 3–4 hours or overnight.
  8. Cut into bars and serve chilled, optionally garnished with cherries or pineapple slices.

Notes

For best results, ensure your cream cheese is at room temperature. Adjust sweetness to preference with sugar.
