Healthy Ground Turkey Sweet Potato Bake

A nourishing one-dish casserole combining lean ground turkey, sweet potatoes, and spinach, baked to perfection.

  • 1 pound ground turkey (lean)
  • 2 medium sweet potatoes, peeled and diced (about 1/2-inch pieces)
  • 1 cup spinach, chopped (fresh)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup shredded low-fat cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 teaspoon olive oil in a large skillet over medium heat.
  3. Add the diced onion and minced garlic. Sauté for 3–4 minutes, until the onion is translucent.
  4. Add the ground turkey. Break it up with a spatula and cook 5–7 minutes until browned and no longer pink.
  5. Stir in paprika, ground cumin, oregano, salt, and pepper. Cook 1–2 minutes to bloom the spices.
  6. Add the chopped spinach and diced sweet potatoes. Mix to combine.
  7. Pour in 1/2 cup low-sodium chicken broth and bring to a simmer. Cook 4–5 minutes so the sweet potatoes begin to soften.
  8. Transfer the mixture to a greased baking dish and spread it evenly.
  9. If using cheese, sprinkle it over the top.
  10. Cover the dish tightly with aluminum foil and bake for 25 minutes.
  11. Remove the foil and bake an additional 15–20 minutes, until the sweet potatoes are fork-tender and the cheese (if used) is bubbly.
  12. Let the bake rest for a few minutes before scooping and serving.

Notes

For a vegetarian version, replace turkey with cooked lentils or a mix of mushrooms and crumbled tofu. Can be made ahead and reheated for weekday lunches.
