1 cup rolled oats
1 cup grated carrots
1/2 cup mashed banana or applesauce
1/4 cup honey or maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup raisins or walnuts (optional)
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix together the rolled oats, grated carrots, mashed banana or applesauce, honey or maple syrup, cinnamon, nutmeg, baking powder, and salt until well combined.
If desired, fold in raisins or walnuts.
Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until cookies are set and lightly golden.

For a gluten-free option, use certified gluten-free oats. For a vegan version, replace honey with maple syrup or agave nectar.
