A delightful twist on your favorite burrito, combining lean chicken, black beans, corn, and rice for a healthy and filling meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups cooked brown rice
  • 1 cup diced tomatoes
  • 1 cup bell peppers, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, black beans, corn, cooked rice, diced tomatoes, bell peppers, taco seasoning, salt, and pepper.
  3. Mix well until all ingredients are thoroughly combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Sprinkle shredded cheese evenly on top.
  6. Bake in the oven for 25-30 minutes or until the cheese is melted and bubbly.
  7. Remove from oven and let cool slightly.
  8. Garnish with fresh cilantro if desired.
  9. Serve and enjoy!
