Delicious gluten-free and dairy-free pancakes made with sweet potatoes, perfect for a hearty breakfast or brunch.

  • 1 egg white
  • ½ cup cooked sweet potato (mashed, not hot)
  • ¾ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • Pinch ground nutmeg

Instructions

  1. In a bowl, combine the large egg, egg white, and mashed sweet potato. Stir well until everything is mixed. Add the vanilla extract, ground cinnamon, and nutmeg, mixing until smooth.
  2. Heat a non-stick skillet over medium heat. Pour a small amount of batter onto the skillet to form a pancake. Cook for about 2-3 minutes until bubbles form on the surface, then flip and cook for another 2 minutes or until golden brown. Repeat with the rest of the batter.

Notes
