These delicious muffins are packed with protein and bursting with sweet blueberries, making them perfect for breakfast, snacks, or dessert.

  • 1 cup blueberries
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until smooth.
  3. In another bowl, mix the oats, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.
