A comforting and budget-friendly Hobo Casserole that’s perfect for families and versatile enough to customize with your favorite vegetables.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, thinly sliced
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your favorite type)
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: mixed vegetables (like corn or peas)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with the chopped onion over medium heat. Don’t forget to drain any excess fat!
  3. Grease a casserole dish and layer half of the sliced potatoes on the bottom.
  4. Spread the beef and onion mixture evenly over the potatoes.
  5. Next, pour the cream of mushroom soup over the meat layer.
  6. If you’re including mixed vegetables, add them now for a burst of color and nutrients.
  7. Top everything off with the remaining sliced potatoes and season well with salt and pepper.
  8. Cover your dish with foil and bake it in the preheated oven for 1 hour.
  9. Remove the foil and sprinkle the cheese on top. Bake for an additional 15-20 minutes until the cheese is melted and bubbly.
  10. Allow the casserole to cool slightly before serving. Enjoy!
