Hobo Casserole with Ground Beef & Potatoes

A simple and tasty dish with layers of ground beef, sliced potatoes, and melty cheese, perfect for busy weeknights.

Ingredients

  • 1 lb Ground beef
  • 45 medium Potatoes, thinly sliced
  • 1 1/2 cups Cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1/2 tsp Paprika
  • Salt & pepper, to taste
  • 1 tbsp Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1/2 cup Beef broth
  • 1/4 cup Milk (optional)
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Thinly slice the potatoes to about 1/4 inch. Dice the onion and mince the garlic.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant. Add ground beef and cook until browned. Season with Italian seasoning, paprika, salt, and pepper.
  3. In a greased baking dish, layer half of the potatoes. Spread half of the cooked beef over the potatoes and sprinkle with half the cheddar cheese.
  4. Repeat layers with the remaining potatoes and beef, and top with the remaining cheddar cheese. Pour beef broth (and milk if using) over the dish.
  5. Cover with foil and bake for 35–40 minutes. Remove foil, sprinkle with Parmesan, and bake uncovered for another 10 minutes until golden brown.
  6. Let rest for 5 minutes, garnish with parsley, and serve.

Notes

Ensure to slice the potatoes evenly for even cooking. You can customize with different cheeses or add vegetables for extra flavor.
