A comforting and nutritious chicken noodle soup, perfect for chilly days or when you’re feeling under the weather.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until the vegetables are tender.
  3. Stir in the garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the cooked chicken, egg noodles, thyme, salt, and pepper.
  6. Reduce heat and simmer for 10-15 minutes, or until the noodles are tender.
  7. Serve hot, garnished with chopped parsley.

Notes

Use fresh vegetables for better flavor and feel free to customize with your choice of herbs and vegetables. Can be stored in the refrigerator for up to 3 days or frozen for longer storage.
