Quick and fluffy pancakes perfect for breakfast or brunch, made with simple ingredients.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or regular milk with vinegar/lemon juice)
  • 1 large egg
  • 2 tablespoons melted butter
  • Butter and maple syrup for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, egg, and melted butter until well combined.
  3. Pour the wet ingredients into the dry mixture. Gently stir until just combined; don’t worry if the batter is a bit lumpy.
  4. Preheat a skillet or griddle over medium heat and lightly grease it.
  5. For each pancake, pour 1/4 cup of batter onto the skillet.
  6. Cook until you see bubbles forming on the surface and the edges are looking dry, around 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  7. Stack them high and serve with butter and a generous drizzle of maple syrup.

Notes

Ensure not to over-mix the batter for fluffy pancakes. Check the skillet temperature with a few drops of water.
