A melt-in-your-mouth beef roast steeped in the rich flavors of caramelized onions and savory broth, perfect for comfort food lovers.

Ingredients

  • 34 lbs beef chuck roast
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1 packet French onion soup mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the roast with salt and pepper, then sear on all sides until browned.
  3. Remove the roast from the pot and set aside.
  4. In the same pot, add the sliced onions and cook until caramelized, about 10-15 minutes.
  5. Return the roast to the pot, add the beef broth and French onion soup mix. Cover and place in the oven.
  6. Cook for 3-4 hours, until the meat is tender.
  7. Once done, shred the roast and serve with the rich sauce, garnished with fresh thyme if desired.

Notes

This dish can be made ahead of time for better flavor and served over mashed potatoes or with buttered bread.
