A delightful dessert that captures the essence of summer with its moist, fluffy texture and tropical pineapple flavor.

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, well-drained
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup icing sugar
  • 2 tablespoons pineapple juice

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Grease and flour a 9-inch round cake pan to prevent sticking.
  3. In a medium bowl, whisk together the flour, baking powder, and salt to distribute evenly.
  4. In a large bowl, cream the softened butter with the sugar until light and fluffy (about 3-5 minutes).
  5. Beat in the eggs one at a time, then add the vanilla extract, mixing well after each addition.
  6. Gently fold in the sour cream.
  7. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  8. Carefully fold in the well-drained crushed pineapple.
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Bake for 30-35 minutes or until a toothpick comes out clean from the center.
  11. While the cake bakes, whisk together the powdered sugar and pineapple juice until smooth for the glaze.
  12. Allow the cake to cool before drizzling the glaze over the top.

Notes

For added texture, consider using chopped nuts or coconut flakes in the batter. Best served with fresh pineapple or vanilla ice cream.
