A refreshing twist on the classic Italian dessert, featuring creamy mascarpone, zesty lemon, and soft ladyfingers.

Ingredients

  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • ½ cup powdered sugar
  • 2 teaspoons lemon zest
  • 1 tablespoon fresh lemon juice
  • 24 ladyfinger biscuits
  • ½ cup lemon curd
  • 1 tablespoon limoncello (optional)
  • Fresh mint leaves for garnish

Instructions

  1. In a large bowl, beat the heavy cream with the powdered sugar until soft peaks form.
  2. In a separate bowl, combine the mascarpone cheese, lemon zest, and lemon juice.
  3. Gently fold the whipped cream into the mascarpone mixture until smooth and well combined.
  4. In a shallow dish, mix the lemon curd with the limoncello (if using) and a splash of water to thin it out slightly.
  5. Quickly dip each ladyfinger into the lemon mixture, ensuring they are moist but not soggy.
  6. Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
  7. Spread half of the mascarpone mixture over the ladyfingers and smooth it out.
  8. Repeat with another layer of dipped ladyfingers and top with the remaining mascarpone mixture.
  9. Refrigerate for at least 4 hours or overnight for flavors to meld together.
  10. Garnish with fresh mint leaves before serving.

Notes

For best flavor, use fresh lemons for zest and juice. Chill overnight for the best results.
