A delightful dish featuring juicy chicken in a creamy sauce enriched with sun-dried tomatoes and Parmesan cheese, perfect for busy weeknights or special occasions.

Ingredients

  • 4 Boneless Chicken breasts
  • Salt and Black Pepper (to taste)
  • 3 tbsp Olive oil
  • 2 cloves Garlic (grated)
  • 3/4 cup Chicken broth
  • 2/3 cup Heavy cream
  • 1 tsp Dried thyme
  • 1/2 tsp Dried oregano
  • 1/3 tsp Chili flakes
  • 1/3 cup Parmesan (grated)
  • 1/4 cup Basil (fresh, chopped)
  • 1/2 cup Sun dried tomatoes (chopped)

Instructions

  1. Pat dry the chicken breasts with paper towels. Season them on both sides with salt and black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat and add the chicken. Cook for 8-10 minutes on each side, then remove from pan.
  3. Add a splash of the dried tomato oil to the pan, then sauté the minced garlic until golden brown.
  4. Mix in the heavy cream, chicken broth, chopped dried tomatoes, chopped basil, dried thyme, dried oregano, grated parmesan, and chili flakes until combined.
  5. Return the chicken to the skillet, cover with the sauce, and simmer for 10 minutes over medium-low heat until fully cooked.
  6. Garnish with chopped basil leaves or fresh parsley and serve.

Notes

To store leftovers, let the dish cool completely and refrigerate in an airtight container for up to 3-4 days.
