A creamy, flavorful pasta dish with tender chicken, sun-dried tomatoes, and a dreamy sauce, perfect for romantic dinners or weeknight meals.

Ingredients

  • 2 large chicken breasts, boneless, skinless, sliced thinly
  • Salt and Pepper, to taste
  • 2 tbsp olive oil, for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional for spice)
  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, season the sliced chicken with salt and pepper, then add to the skillet. Cook until golden brown and no longer pink, about 5-7 minutes. Remove the chicken and set aside.
  3. Create the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add sun-dried tomatoes, followed by chicken broth, heavy cream, and Italian seasoning. Bring to a simmer.
  4. Combine Everything: Add the cooked chicken back into the skillet along with the pasta. Mix well, incorporating any reserved pasta water as necessary. Stir in the grated parmesan cheese until creamy and well combined.
  5. Season and Serve: Adjust seasoning with salt, pepper, and crushed red pepper flakes if using. Serve immediately, garnished with fresh basil.

Notes

Serve with a green salad or garlic bread for an elevated dining experience. Leftovers can be refrigerated for up to 3-4 days or frozen for 3 months.
