A delightful one-pan dish of tender chicken, creamy sauce, and pasta, perfect for impressing guests or a special weeknight dinner.

Ingredients

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish

Instructions

  1. Boil a pot of salted water and cook the pasta until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and season chicken with salt and pepper. Cook until golden brown, about 5-7 minutes.
  3. Add minced garlic and sun-dried tomatoes, cooking for another 2 minutes.
  4. Pour in the chicken broth and simmer for one minute; then, add heavy cream and Parmesan cheese, stirring until smooth.
  5. Mix in Italian seasoning and crushed red pepper flakes if using, and simmer until the sauce thickens slightly.
  6. Add the cooked pasta, tossing to coat in the creamy sauce, and heat for another 2 minutes.
  7. Garnish with fresh basil before serving.

Notes

For extra flavor, marinate the chicken in Italian seasoning for an hour before cooking. Pair it with a side salad or garlic bread.
