Delightful cookies that combine rich chocolate flavors with chewy oats, making them irresistible and perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/4 cups light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup white chocolate chips
  • 1 cup semisweet chocolate chips
  • Chopped pecans or walnuts (optional)

Instructions

  1. Melt 1 cup of unsalted butter in a small bowl or microwave.
  2. In a mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Stir well.
  3. Add 2 large eggs and 2 teaspoons of vanilla extract to the bowl. Mix until everything is well combined.
  4. In another bowl, whisk together the flour, oats, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the white chocolate chips and semisweet chocolate chips, along with nuts if you like.
  7. Refrigerate the dough for at least 1 hour.
  8. Preheat the oven to 350°F (175°C).
  9. Scoop the dough onto a baking sheet and bake for 12-15 minutes or until golden.
  10. Let the cookies cool on the baking sheet for a few minutes before moving them to a wire rack.

Notes

Chill the dough for at least an hour to help the cookies hold their shape while baking. Experiment with different nuts or add dried fruit for a twist.
