A creamy and comforting soup combining tender chicken, fluffy gnocchi, and fresh spinach in a rich broth.

Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach (or 1 cup frozen)
  • 2 tsp Italian seasoning
  • 4 cups low-sodium chicken broth

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. In a large pot over medium heat, heat olive oil and sauté the chicken until golden brown (5-7 minutes). Remove and set aside.
  3. In the same pot, add garlic and sun-dried tomatoes; sauté for 2 minutes until fragrant.
  4. Pour in chicken broth and heavy cream; bring to a simmer.
  5. Return the chicken to the pot.
  6. Add gnocchi and spinach; cook until gnocchi floats (about 5 minutes).
  7. Stir in Italian seasoning, serve hot with crusty bread.

Notes

Use fresh ingredients for the best flavor. Don’t overcook the gnocchi; they are done once they float. Feel free to add more vegetables like bell peppers or zucchini for heartiness.
