A delightful twist on classic quesadillas featuring spinach, feta, mozzarella, and red onion. Quick, budget-friendly, and perfect for any occasion.

Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix until well combined.
  2. Lay one flour tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla.
  3. Fold the tortilla over to cover the filling, creating a half-moon shape.
  4. Heat a non-stick skillet over medium heat and add the olive oil.
  5. Carefully place the filled tortilla in the skillet and cook for about 3 to 4 minutes, or until golden brown.
  6. Flip the quesadilla carefully and cook for another 3 to 4 minutes until crispy.
  7. Remove from heat, slice into wedges, and serve warm.

Notes

Serve with tzatziki for dipping or a fresh Greek salad. Leftovers can be refrigerated for up to 3 days or frozen uncooked for about 2 months.
