Ingredients

  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 3/4 cup milk (or dairy alternative)
  • 1 large egg
  • 2 tbsp melted butter (or oil)
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.
  2. In another bowl, mix milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined; do not overmix.
  4. Heat a non-stick skillet over medium heat.
  5. Pour small amounts of batter onto the skillet to form mini pancakes.
  6. Cook for 1-2 minutes or until bubbles form on top; flip and cook until golden brown on both sides.
  7. Serve warm with your favorite toppings.

Notes

Do not overmix the batter for the best results. Experiment with toppings like chocolate chips, berries, or nuts.
