Deliciously moist banana bread muffins made with overripe bananas, perfect for breakfast or an afternoon snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Stir in the melted butter until well combined.
  4. Add the baking soda and a pinch of salt, mixing them in.
  5. Fold in the sugar, followed by the beaten egg and vanilla extract.
  6. Gradually add the flour, mixing until just incorporated.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.

Notes

For added flavor, consider incorporating chopped nuts, cinnamon, or chocolate chips into the batter.
