A tender and flavorful banana bread made with ripe bananas and creamy sour cream, perfect for brunch or snacks.

  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, sour cream, melted butter, sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk the flour, baking soda, and salt together.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently just until combined.
  5. If using walnuts, fold them into the batter.
  6. Pour the batter into the prepared loaf pan and smooth over the top.
  7. Bake for about 60-70 minutes, checking for doneness with a toothpick.
  8. Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

To keep leftovers fresh, store in an airtight container at room temperature for up to three days or freeze for up to three months.
