Delicious and nutritious no-bake treats made with pumpkin, oats, and peanut butter, perfect for any time of year.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon

Instructions

  1. In a large mixing bowl, combine pumpkin puree, oats, peanut butter, maple syrup, and cinnamon. Mix until well blended.
  2. Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the mixture.
  3. Once chilled, scoop out portions and roll into 1-inch balls.
  4. For extra flavor, roll each ball in crushed nuts or shredded coconut if desired.
  5. Place on a parchment-lined baking sheet and refrigerate for an additional hour to set.
