  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together pumpkin puree, sugar, oil, and eggs until well combined.
  3. In another bowl, sift together flour, baking powder, baking soda, spices, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bars cool completely before frosting.
  8. To make the frosting, beat together cream cheese and butter until smooth.
  9. Gradually add powdered sugar and vanilla, mixing until well combined.
  10. Spread the cream cheese frosting over the cooled pumpkin bars and cut into squares to serve.

Notes

Use fresh pumpkin puree for better flavor and make sure to cool the bars completely before frosting to prevent melting.
